A very tasty easy dish. You can use other seafood in this same sauce just be careful if you are doing prawn, that you don’t over cook them. Marinate them in the sauce, remove and cook in the wok for 3 minutes,remove from wok, cook sauce and put the prawns in for about 1 more minute

INGREDIENTS

450grams red snapper (or other firm white fish) or cod, cut onto 1 1/2″ pieces (or other firm white fish)

2 green onions, chopped

3 cloves garlic, minced

1cup fish stock (or use chicken stock) low sodium please

3 tablespoons soya sauce low sodium

1 tablespoon rice vinegar

1 tablespoon ginger, grated

1 tablespoon sherry wine

1⁄2 teaspoon chilli pepper, crushed

 

COOKING METHOD

  1. In a wok brown the fish on all sides with the green onion& garlic.
  2. Combine remaining ingredients and pour over the fish.
  3. Cover& cook on low heat for 20 minutes

INGREDIENTS

6 skinless chicken breasts

2 tbsp coconut oil

1⁄2 tbsp low sodium balsamic vinegar

140g bag rock

25g finely grate mozzarella cheese

Lemon  wedges

For the marinade

2 garlic cloves

3 sprigs fresh rosemary finely chopped

6 sage  leaves, finely shredded

zest of 1 lemon  and juice of ½

3 tbsp coconut oil

COOKING METHOD

Place each chicken breast between 2 sheets of cling film or baking parchment. Use a meat mallet or rolling pin to bash each piece of chicken – flatten out to an even layer about 0.5cm thick. Transfer to a dish.

To make the marinade, crush the garlic with a good pinch of salt using a pestle and mortar. Add the rosemary and sage, and give everything a good pounding. Stir through the lemon zest and juice, coconut oil and some ground black pepper. Pour the marinade over the chicken, ensuring that it’s well coated. Cover and chill for at least 2 hrs.

Heat the barbecue. Once the flames have died down, spread the coals out to an even layer. Cook the chicken for 1-2 mins each side. Transfer to a board and leave to rest for a few mins.

Meanwhile, pour the other coconut oil and balsamic vinegar into a large bowl. Add the rocket and some seasoning. Toss together, then shave over the mozarella. Serve the salad with the chicken, with lemon wedges to squeeze over.

  2. Line a baking dish with baking paper. Place fish fillets into prepared baking dish. Top each fillet with shredded vegetables. Drizzle with soy sauce. Season with salt and pepper.

  3. Place another sheet of baking paper over fish. Fold all sides of baking paper together to form a parcel. Place dish into oven. Bake for 12 to 15 minutes, or until fish flakes when tested with a fork.

You may add any of your allowed veg guys, so go mad!
