hCG Phase 2 Pickled veggies

A super alternative to just having the usual ol’ veggies!

Ingredients for the pickling liquid

  • 1 cup apple cider vinegar
  • 1 cup verjuice
  • 4 T Stevia Liquid
  • 1 T salt
  • 1 T mustard seeds
  • 5 cloves garlic, thinly sliced
  • A selection of:
  • 100 g baby beetroot, peeled
  • 10 rainbow radishes
  • 200 g, baby Rainbow carrots, peeled

You may use any veggies of your choice depending on which phase you are on!

Cooking Instructions

Whisk the vinegar, verjuice, stevia and salt in a saucepan over a medium hea. Bring to the boil and turn off the heat. Mix in the mustard seeds and garlic.

Place the vegetables in jars and cover with the pickling liquid. Seal with an airtight lid and cool.

hCG Phase 2 Nectarine and tomato salad with baby cos lettuce

Nectarine and Tomato salad with baby cos lettuce:

Try this zesty salad to take some boredom out of your day Bettabods.

Ingredients

  • 2 ripe tomatoes
  • 1 head of baby cos lettuce
  • 3 ripe nectarines
  • 2 T red wine vinegar
  • 2 T coconut oil
  • micro mustard cress herbs
  • freshly ground black pepper, to taste

Cooking Instructions

Cut the tomatoes into quarters. Coarsely shred the baby cos lettuce and halve the nectarines.

Drizzle with red wine vinegar and coconut oil and arrange on a large platter.

Sprinkle over micro mustard cress herbs and season with a good crack of black pepper.

 

Remember making your meal times interesting stops boredom which means you are likely to continue being successful!

hCG Phase 2 Baked Oranges

Looking for other ways in which to have your fruits whilst on the Bettabods Protocol.  Here is another amazing recipe guys and gals.  It is super and can be served up in 10-15 minutes.

INGREDIENTS

  • 2 T coconut oil
  • ¼ cup stevia liquid or to taste
  • 1 orange, juiced and zested
  • 3 bay leaves
  • 8 oranges

COOKING INSTRUCTIONS

Place 2 T butter, ¼ cup honey, the juice and zest of 1 orange and 3 bay leaves in a saucepan and heat to make a syrup.

Peel 8 oranges and bake in the syrup at 180°C for 10–15 minutes.

WHEN IN PHASE 4

Scatter with pistachios and serve with a nice low fat ice cream!

hcg Phase 2 Juicy citrus chicken

Enjoy this tangy citrus chicken dish which is great if you’re having guests over for dinner, or just as a super quick easy mid-week meal

INGREDIENTS

  • 1 free-range chicken
  • 2 lemons, juiced
  • 2 grapefruit, juiced
  • 3 cloves garlic, finely chopped
  • 2 T coconut oil

COOKING INSTRUCTIONS

Cut the chicken into 4 pieces. Mix the remaining ingredients except the coconut oil and marinate the chicken for 1 hour.

Preheat the oven to 200°C. Heat the coconut oil in a non-stick pan over a medium to high heat and brown the chicken.

Finish in the oven until cooked through and golden, basting with the citrus marinade.

This is a Turkish salad that’s great as a side but can also be used for a sauce over braai meat or for a roast chicken, or other, and is also a great relish for your burger wraps. The riper the tomatoes are, the better and if you like it less fiery, use less chillies. The raw tomato paste really lifts the flavours in this gorgeous dish.

INGREDIENTS

  • 6 ripe tomatoes
  • 1 red pepper
  • 2 T roughly chopped mint
  • 2 T roughly chopped parsley
  • 1 chopped red chilli
  • 2 T tomato paste
  • 2 T coconuut oil
  • 1 T lemon juice
  • 2 spring onions, sliced
  • 1 red onion, chopped
  • 2 garlic cloves, finely chopped
  • Himalayan salt and freshly ground black pepper, to taste
  • fresh mint, to garnish

COOKING INSTRUCTIONS

Chop 6 ripe tomatoes and 1 red pepper and place in a bowl. Add 2 T roughly chopped mint, 2 T roughly chopped parsley, 1 chopped red chilli, 2 T tomato paste, 2 T coconut oil and the juice of 1 lemon.

Mix, then add 2 sliced spring onions, 1 chopped red onion and 2 finely chopped garlic cloves and season to taste. Garnish with mint leaves and serve as desired .
